I’m not too sure what I would consider this recipe, somewhere between tiffin, rocky road, bark and a chocolate bar. But whatever they are, they taste great. And they look cute.
It’s really easy to make at home, with kids (or by yourself, like me) and have in the fridge to grab. Making your own snacks means you know what’s going in them, and it’s really fun, especially when chocolate is involved. These are naturally gluten free and vegan too (if you use dark chocolate).
Here’s what you need to do.
Melt 150g chocolate (I used dark, but it would work with milk or white)
Add 1 tbsp cocoa powder, 1 tbsp milk (I used hazelnut but any milk would work), and 1 tbsp nut butter, I went for Coconut Peanut. Stir until combined – it will go pretty thick at this point.
Add in fruit and nuts of your choice. I used 50g hazelnuts, 50g pecans, 1 tbsp dried cranberries and 2 tbsp sultanas. Stir together. You could add anything you want at this point, biscuit pieces, mini marshmallows, fudge, go mad.
Line a tin/tray/dish with cling film and press the mix in to the base until in a fairly even layer. If you want to be extra fancy you could spread another layer of chocolate over the top here.
Top with Easter chocolates of your choice – I used Galaxy Golden Eggs and Smartie Eggs.
Chill in the fridge until set before cutting in to pieces.
