These flapjacks are so easy to make and great to have around to grab. Fair warning, they’re pretty addictive. Top them with whatever you like, shake it uppppp.
All you gotta do:
Soak around 10-12 medjool dates in hot water (about 100ml should be fine).
Melt 1 tbsp coconut oil, 1 tbsp honey/maple syrup in a pan. Add 1 tbsp nut butter (I used Pip and Nut Maple Peanut Butter and it is life changing). Put everything together in a blender and blend until smooth (I use a Nutribullet so the nut butter goes mega smooth).
Stir through 150g oats. Push in the base of a tin and bake at 180C for around 15 mins.
Allow to cool.
Melt 100g dark chocolate in a bowl over hot water. Spread over the top of the flapjacks, and top withever ya like. I used dried cranberries, flaked almonds and coconut shavings. Chill in the fridge until the chocolate is set. (The flapjacks, not you.)
Cut in to pieces and try your best not to eat it all at once. But you probably will.
