Banana Oat Tahini Cookies

Today I played a game of how many great tasting things can I put in one cookie.

I had a some old bananas that needed using and instead of making my usual banana bread I wanted to try something a little different.

These little cookies are soft and chewy, they’re sweet without being sickly and they’re pretty flipping fantastic if I’m honest. oat tahini cookies.png

Mash 2 ripe bananas with a fork, add 3 eggs and stir to combine. Add 1 tbsp of nut butter (I used peanut butter), 2 tbsp of tahini, 1 tsp of cinnamon and stir thoroughly.

Next add 2 tbsp sugar of your choice (I used brown sugar, but you could use honey, maple syrup, white sugar, stevia, whatever) and 1 tbsp of melted coconut oil.

I added sultanas and flaked almonds at this point but you could any type of dried fruit, nuts, chocolate chips. I’m gonna use cranberry, coconut and dark chocolate next time. I’m already planning my next batch.
